Eggplant Panini

Ingredients

Butter Milk Blue Dressing

  • 1 cup mayo
  • ¾ cup sour cream
  • 1 tsp Worcester sauce
  • ¼ tsp dry mustard
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 ½ cups blue cheese dressing (see below)
  • In a large bowl whisk together mayo, sour cream and Worcester sauce. Season with mustard, garlic powder, salt and pepper. Stir in dressing.

Blue Cheese Dressing

  • 1 cup blue cheese dressing
  • ¼ cup butter milk
  • Mix well

Directions

  • Grill or roast eggplant
  • Toast Panini
  • Dress Panini with butter milk blue dressing and eggplant,
  • garnish with heirloom tomatoes and fresh baby arugula
