Ingredients

Grilled Pineapple Salsa

  • ½ pineapple pealed and grilled
  • 4 jalapenos
  • 1 red pepper
  • 1 small lime (zest and juice)
  • ½ red onion diced
  • ¼ bunch cilantro

Ginger Lime Crema

  • 1 ¼ oz ginger peeled and grated
  • 1 lime (zest and juice)
  • 1 cup sour cream
  • ¼ tsp. salt

Blackening Seasoning

  • ½ cup paprika
  • ¼ cup salt
  • ¼ cup black pepper
  • 2 tbsp. garlic powder
  • 2 tbsp. onion powder
  • 1 tbsp. cayenne powder
  • 1 tbsp. oregamo
  • 1 tbsp. thyme leaf
  • 1 tbsp. crushed red pepper

Directions

Grill Mahi Mahi

Grilled Pineapple Salsa

  • Grill pineapple and dice
  • Dice jalapenos, red pepper, red onion and lime juice
  • Mix all ingredients

Ginger Lime Crema

  • Mix all ingredients well

Blackening Seasoning

  • Mix all ingredients well
