Poblano Wild Mix Recipe
Eat fresh and healthy with this Poblano Wild Mix recipe. It’s a traditional Mexican dish from “The Taste of Puebla” as well as a local favorite in the Mexican city of Puebla. Chef Mariana shares her family recipe complete with chef secrets and tips on how to recreate this truly authentic dish.
Poblano Wild Mix Ingredients:
- 2 Pounds of Chicken Breast
- 2 tablespoons of Olive Oil
- 1 tablespoon of Garlic Salt
- 4 Poblano peppers
- 16oz of Salsa Fresca (Salsa Verde; tomatillo blend)
- 2 pounds of Portobello mushrooms
Poblano Wild Mix Directions:
Cut chicken breast into portion able size stripped pieces, grab a bowl to marinate the chicken by mixing it with the tablespoon of garlic salt. Let that sit for around 30 minutes, as that’s marinating you can dice your Portobello’s into small pieces. Next, grab your 4 poblano peppers and, using a pair of tongs, carefully roast the peppers over the burner until both sides are crisped. Place the peppers in a bowl, then cover the bowl with a plastic saran wrap and let sit for 15 minutes. When ready the peppers outer peel will start coming off, allowing you to clean and take out the seeds. Cut peppers in pieces and set aside.
In a pan on medium heat add two tablespoons of olive oil. When the pan is hot, add the chicken breast pieces letting them sear for around 10 minutes. When the chicken is ready add the diced Portobello’s and stir well for 1-2 minutes.
Pour in your salsa Fresca while continuing to stir the rest of the pan, add water if needed. Let the pan boil for around 10 minutes giving the chicken enough time to fully cook. Lastly mix in poblano peppers and let it boil for 3 minutes, taste also putting in more garlic salt at your own pleasure and enjoy!
