Tomato Salad
So versatile, all fresh and easy to make! It’s great as a side salad or dish, you can easily make it into a bruschetta by placing a spoonful of tomato salad on mini pieces of toast, sprinkle with feta cheese and top with a drizzle of fig, or spice it up with mangos or peaches and serve it as a salsa dip with a side of chips or nachos.
Simply combine the following ingredients and refrigerate until ready to serve.
- 4 to 5 Roma Tomatoes
- ½ cup Red Onion
- ¼ cup Fresh Cilantro
- ½ of a hot pepper (or jalapenos – depending on how much heat you want)
- Juice from ½ lime
- Garlic Powder & Salt to taste
